Oils should be served at room temperature (around 28 °C) in dark glass cups, which prevent the color from influencing the evaluation. Make sure to have water and pieces of apple or neutral bread available to cleanse your palate between samples.

2. Visual evaluation

Although in professional tastings the color isn’t a criterion for determining quality, it’s still interesting to observe. Tilt the glass and examine the density and hue of the oil, which can range from golden yellow to intense green. These variations reflect aspects like the olive variety or the harvest time.

3. Olfactory analysis

Bring the glass close to your nose and take a deep inhale. Try to identify the aromas emitted by the oil. You may detect fruity, herbaceous notes, or even hints of nuts or flowers. A good extra virgin olive oil should offer fresh and balanced aromas. If rancid or unpleasant smells are detected, it could indicate a defect.

4. Tasting

Take a small sip, allowing the oil to coat your tongue and mouth. Draw in a bit of air while holding it in your mouth (a process called “retro-olfaction”) to activate taste and aroma receptors.
